We all have those family recipes that we long for this time of year. Just things that you know are going to be there and that are going to be amazing. Somethings take days to prepare, some things appear to take days to prepare and some are just shockingly easy. I love visiting my aunts place for Christmas and having meatballs. When my wife and I got married we asked for recipe cards from everyone. My aunt shared her meatball recipe. I swear, I had no idea.

Holiday meatballs:

Cooked frozen meatballs

I jar of grape jelly

2 jars of chili sauce

That’s it. They are amazing. So,what are your epic family recipes?

Here’s my grandmother’s Crazy Cake recipe. It’s the moistest most chocolaty cake you’ll ever eat. We traditionally eat it for breakfast Christmas morning.

Use a bundt pan, not tubu lar, and skip the frosting for a simple dusting of powdered sugar on top.

Tom Collins:

2 oz gin
1 oz lime juice
.5 oz simple syrup

Shake over ice, strain over fresh ice. Top with club soda.

Guzzle. Repeat.

Get yelled at because your mom thinks 6 is enough.

Standard Thanksgiving desert for my family is Tyler pie:

Here’s a recipe I’ve used before when my grandmother’s isn’t handy

 RECIPE: Edna Lewis’s Tyler Pie

2 9-inch pie crusts

Filling:

4 eggs

2 cups of sugar

1 teaspoon of flour

1/2 teaspoon salt

1 cup (1/2 lb) of slightly melted butter

1 teaspoon vanilla extract

1 teaspoon lemon extract

2 cups milk

To make the pie:

Keep the piecrust chilled while you prepare the fillling ingredients.

Beat the eggs well in a large bowl.

Combine the sugar, flour and salt in a medium bowl and stir to mix well.

Add the sugar mixture to the beaten eggs and mix well.

Add the butter, vanilla, and lemon extract, and stir to mix everything together well.

Add the milk.

After one final stirring, pour the filling into your pie crust pans, dividing it evenly between the two..

Bake in oven preheated to 350 degrees for 35 to 45 minutes, until filling is set and handsomely browned. Males 2 pies

Top round roast:

Bigass hunk of meat. Top round.

1 whole big clove of garlic

olive oil

rosemary

basil

oregano

directions:

pull meat out (hehehehe i’m so fucking juvenile) and let come up to room temperature. bit of salt on all sides to draw out the moisture. as it’s warming, keep drying it.

start heating your oven. broil works, 450 or 500 degrees, whatever’s clever.

chop/shred/whatever the clove of garlic after peeling it. the whole damn thing. it should be a big one.

take a bowl or something and put all of the garlic in it

douse that shit with olive oil, and throw in a shit-ton of rosemary, basil and oregano. taste the delicious mixture to make sure you like it.

turn on your stovetop and get a pan/skillet raging, holy shit goddamn hot.

while that’s heating up, slather the shit out of that top round with your seasoning mix of spices/garlic/olive oil. get it goooood and covered.

oil your pan. if you have a badass fan system, butter (like a half a damn stick, live a little) works well. if not, oil works great too.

now that your pan is fuck you hot, take the slathered roast and s ear the ever loving fuck out of each side of that roast for like... 2 to 3 minutes a side. 3 at most. each side. top, bottom, and all sides. get a good sear and crust on it.

remove roast from skillet, and slap that fucker in the oven until the middle is cooked to desired temp. probably like 10-15 minutes. i’m a medium, medium rare guy. some like it ‘moo’. some people are heretics and like eating hockey pucks. I used a piece of meat that was 3 damn inches thick and the middle was more medium than medium rare but i’m also a hack who doesn’t have a meat thermometer and i wing this as I go along.

remove from oven, let rest for like 10 more minutes.

cut that fucker open and eat up.

Growing up my dad always cooked the thanksgiving turkey, but once I got a smoker and got my bbq game on, pops was more than willing to hand me the reins. So, for the last few years, I have served a brined and smoked turkey for thanksgiving. It’s a huge hit, always comes out perfect.

Brine:

2 c Kosher salt

2c Brown sugar

3 tbsp whole peppercorns

5 bay leaves

4 oranges (juice and rinds)

1/2c minced garlic

3-4 rosemary sprigs

2 gallon apple cider

1 gallon water

- Bring all ingredients to a boil. Let cool overnight.

I use a small-ish cooler, place the thawed turkey in it, pour the cooled brine over the turkey, then cover with a layer of ice to keep the bird between 35-40 degrees. Brine it for at least 24 hours.

- Remove turkey from brine, pat dry. Stuff with oranges, whole garlic cloves and onions.

-Smoke at 300 degrees in my Camp Chef smoke vault. Apple hardwood for smoke, and 50/50 water and apple juice in the water pan. Will take 5-6 hours.

I smoke hot and fast rather than low (225-235 degrees) and slow with turkey, because the longer you cook it, the more likely it will dry out.

Never had a specific recipe since I dont use those to cook normally, just kinda wing it and hope for the best. This is why I dont do well at baking. But there is one recipe I love making that was inspired by something my mom would make. Banana bread is the only thing that I will measure stuff out to make.

1/2 cup butter, melted

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup sour cream

1/2 cup chopped walnuts

2 medium bananas, sliced (double this for me)

I also usually add cinnamon and chocolate chips if I really want to get crazy. The sour cream and double the bananas is the key to this recipe. I always take bananas that are entirely black and then freeze them. Over the course of a few months I stockpile these that would otherwise be thrown out and then defrost them at some point for perfect banana ingredients. Its also important to undercook this since moisture is absolutely the entire point. It should come out more like a cake than a bread which is perfect. I cannot stand store bought banana bread because its always dry as fuck.

My problem logically with that was that this method wasnt repeated when teaspoon was used twice in a row. Thats still a ton of sugar either way lol. I have a cookie recipe that was suggested as 1 cup of sugar, 1 cup of peanut butter, and 1 egg. Real simple and its great. But that is wayyyy too much sugar, I use about 1/4 cup instead and then load it up with chocolate chips. Off topic though lol.

Holy shit, I have my great aunts Judy’s Crazy Cake recipe and it is nearly identical. We cook it thin on a cookie sheet and serve it up like brownies. Literally , my favorite backed food in the world. It’s like eating my childhood, but in the best way. Her recipe includes a fudge frosting.

Crazy Cake

Cake ingredients.

2 cups flour

2 cups sugar

1 cup hot water

6 tbs cocoa

1/2 cup buttermilk

2 eggs

1tsp soda

1 tsp vanilla

2 cups flour and 2 cups sugar mixed together.

In a sauce pan place 2 sticks of butter (use margarine), 1 cup hot water, 6 tbs cocoa. Bring to a boil, stirring constantly. Add to sugar and flour mixture. Stir in 1/2 cup buttermilk. Add two slightly beaten eggs. Add 1tsp soda and 1 tsp vanilla. Pour into a jelly roll pan. Bake at 375 for 20 min.

Topping

1 cube (1/3 cup) margarine.

6 tbs milk

3 tbs cocoa

1 box powdered sugar

1 tsp vanilla

Chopped nuts

While cake is baking,in a sauce pan cook 1 cube (1/3 cup) margarine, 6 tbs milk, 3 tbs cocoa until it comes to a boil. Remove from heat and add 1 box of powdered sugar and 1 tsp vanilla. Pour over hot cake. Sprinkle with chopped nuts.

Here are five holiday recipes with almonds:

1. T oasted almonds

Place almonds in a pan and apply heat. W ait until almonds are browner. S erve with a leaf as a garnish.

2. Almonds with milk

Place a lmonds in a pan. Pour milk over almonds. Serve with a leaf as a garnish.

3. Flamin’ hot almonds

Stuff a Carolina Reaper pepper with almonds in a pan . Serve with a leaf as a garnish.

4 . Penalmonoconut

Coat almonds with peanut butter in a pan . Stuff peanut buttered almonds in coconut. Serve with a leaf as a garnish garnishing garnish leaves.

5. Candy cane almonds

Place almonds in a pan. Apply mint toothpaste to almonds. Serve with absolutely no garnish whatsoever, under any circumstances. Don’t even think about garnishing it with leaves. If I told you why, I’ d have to kill you.

*Note that I didn’t necessarily say my recipes were any good. This doesn’t bother me though, since I’m mildly allergic to almonds anyway.

My mother’s dead-simple apple pie is an annual treat for both Thanksgiving and Christmas. Not the specific absence of nutmeg.

Gru mmy’s Apple Pie

3 pounds of Granny Smith apples, peeled and sliced thinly
1 cup sugar
2 heaping tbsp flour
1 tsp cinnamon
Dash salt

Mix spices together. Pour over apples. Place a few pats of butter on top of the apples. Bake at 350 for 50 minutes.

Chili sauce is really a generic term for any sauce that utilizes chilies, tomato sauce, vinegar (sometimes), sugar, and other spices. The key differentiator from traditional hot sauce is its thickness. Chili sauce isn’t something you’d sprinkle from a hot sauce dasher bottle.

It is a scam, but I have successfully made it with GF flour for a friend.

This recipe also makes good cupcakes if you adjust  cooking time accordingly.

Heinz Ch ili Sauce and a little jar of horseradish mixed together makes the best cocktail sauce for boiled shrimp! Mom taught me this over 50-years ago.
